The Gmail Privacy Policy openly acknowledges this:

We use the information we collect from all of our services to provide, maintain, protect and improve them, to develop new ones, and to protect Google and our users. We also use this information to offer you tailored content -- like giving you more relevant search results and ads.

This means that if a business chooses Google Apps to host their mail services, then the volume of sensitive information that could be accessed by Google is frightening. The terms of the Privacy Policy do not guarantee the safety of a user's information.

For businesses that are serious about system security, Gmail is simply not an option. This is one of the many reasons our engineers at National Technologies do not recommend Google Apps, but rather prefer to implement Office 365 for our clients.

Office 365 does not collect your information. Here's what the Microsoft Privacy Policy says about data-mining:

We do not mine your data for advertising purposes. It is our policy to not use your data for purposes other than providing you productivity services.
